Paleo Granola Bars

I had a MAJOR craving for something I couldn't put my finger on! I didn't know what I wanted but I knew I needed whatever it was! It was a very odd feeling so I decided to see where it took me! And THANK GOODNESS that I did! What I have created here is probably my ALL TIME FAVORITE recipe!! And that is saying quite a bit! It totally satisfied my craving and was so delicious that I may have polished it ALL off in no time at all! It reminded me of a mix between my mom's fabulous granola bars (with marshmallows, peanut butter, and sunflower seeds) and puppy chow! The coconut gave it a soft crunch and the almond butter coating made me want to cry of happiness!

AIP Chewy Lemon Cookies

These cookies are like none other! They have a yummy chew, a zing of tart lemon, and the perfect balance of flavors! They are actually pretty quick to whip up, and I have done you a HUGE favor in not making you zest the lemons! My least favorite part of lemon cookies is being up to my elbows in lemon, and accidentally raking my fingers across the grater. But alas, I have created one of my favorite recipes thus far that does NOT require tedious zesting! Yay! And it will fill your kitchen with the warm flavor of lemon and vanilla. Hmmm....

My Take on Where I Came From

Today, I remembered where I came from. As I reintroduced a new food, my body reacted. I got a new raw patch of pink skin from involuntary itching during the night and it has opened my eyes. When I was little, both my legs and arms used to be covered in these patches of extremely painful spots. Lately, I haven't really taken the time to appreciate the fact that up to this point on the AIP, I have been Eczema free! I got a small taste of what I used to deal with on a daily basis and it made me so extremely thankful that I have found this new way of living.

My Take on Committing to the AIP

For me, deciding that I would commit to this diet for as long as it takes, was the hardest step of the process. I could give up my favorite foods for a set amount of time but could I for an indefinite amount of time? I wouldn’t know when the next time I would have pizza would be. I couldn't have candy after dinner or ANY condiments that have sugar (which is all of them!). There was one night when it dawned on me that I had to decide.

AIP Vanilla Cookies

Armed with my freshly made tapioca flour, I was ready and excited to create a new cookie recipe! These cookies are SO good. Yup. It’s true! I made two batches of cookies, one with paleo ingredients (using almond flour) and one using AIP ingredients (coconut and tapioca flour). To my astonishment, the coconut flour ones turned out better! Coconut flour is a staple but a hard one to use. It is quite finicky and likes to be paired with eggs in baking to ward off any dryness. However, since eggs aren’t AIP, I sometimes have to be creative in both binding and keeping things moist. These cookies are the PERFECT way to use coconut flour! I mean, cookies? Bring it!

The cookies do look extremely dry, but please believe me; they are NOT as dry as they look! They are cake-y and delicious but dry is not an adjective that I would use to describe them!

My Take on Sunshine and Vitamin D

How much time do you spend in the sun every day? Do you ALWAYS wear sunscreen? Do you ever wear sunglasses? At the end of the semester last school year I was inside all day every day. I had so many quizzes to take, exams to do, and classes to finish before the summer. I sorta forgot about my health and my whole focus was on school and nothing but it. I didn’t get much sun either. I was indoors all day and didn’t get out of the house but a few times a week. My health started drastically declining.

My Take on Friends

Friends are great! When we first moved here to Mexico, it was awful. I missed my friends so much. I missed having friends that I could be myself around and have fun with. I was fairly outgoing in the States but when we moved, everything was harder. It was hard to adjust to having no one to talk to but your immediate family. It just wasn't easy. I was so shy to use my Spanish that many times, other kids my age thought I didn't speak any. And when I would use it, I would be so nervous that I would mess up which made me embarrassed and more nervous. I am so talkative in English yet I couldn't be more awkward in Spanish-even though I am somewhat fluent.

AIP Ravioli with Pumpkin Filling!

AHHH!! Have you ever accomplished something that is just too great for words and you simply can't believe you ACTUALLY did it? Well, that is pretty much how I am feeling at this moment. I just created THE perfect RAVIOLI!! Sierra has been wanting Ravioli for some time now and so today I finally went all in! These ravioli are grain free, dairy free, egg free, nut free, seed free, meat free, and vegan! That is quite the list! Even though they aren't made from traditional ingredients, they are SO GOOD! Seriously...

AIP Blackberry Pear Pie


What do you do with a bunch of pears and some blackberries that are going bad? Make PIE!! The filling in this pie is SO GOOD! It is fruity and sweet and the pears take on an amazing blackberry flavor and a bright pink hue! The dough reminds me of a gingerbread flavor and complements the filling beautifully! Once again I used plantain flour (My FAVE! Learn how to make it here) and the dough was so workable! It is so exciting to finally find an AIP flour that makes dough that isn't incredibly sticky or crumbly. Yay!

How to Make Plantain Flour

Today, I will share with you one of the most important base recipes that I have in my arsenal. The two most important recipes to have memorized (in my opinion) are plantain flour and coconut milk. Without these two things I would be so lost! Today I will show you how to make plantain flour! Supposedly this flour can be substituted 1:1 with wheat flour and is SO much healthier! Based on my experiments, I have found that as long as you don’t mind a slight banana-y flavor, it can sub just fine! The texture is perfect and it works so beautifully!


I am SO BLESSED!!

We don't realize what we have. I wish I could realize JUST how much I have. We live such cozy comfy lives. I have a house with a family that loves me like crazy and a God that loves me even more. I have a snack when I am hungry and a treat when I am full. I get to sleep in on Saturdays and do school in my living room if I want. I get to experiment with recipes and blog my breakthroughs. I get to burrow in my blankets when it is rainy and turn on the fan when it is hot. I get to take hot showers and put on clean clothes. I have neighbors/friends that are so thoughtful I get all warm and fuzzy inside when I think about them! And to think that my life is supported by a group of people who love Jesus and are proud to be part of his work is just fantastic.

AIP Mustard

MUSTARD! CAN YOU BELIEVE IT?! I sure can't! I am SUCH a condiment person! My family even calls me "The Condiment Queen"! Ever since going on the AIP I have been hurting for some sauce. Sauce that doesn't need expensive/hard to find ingredients. So I walked into the kitchen on a mission for some mustard. My burger would NOT be bland tonight! You can make this in about 5 minutes too (no waiting for it to chill or to boil) so that is a bonus! However, it does melt. So beware! I love it slathered on some biscuits but just be careful that it doesn't start running down your hand! A tasty problem to have!

My Take On Faithfullness

Our job as people of Christ is so big. It is a huge responsibility to be faithful with what we are given, spread the word of Jesus to every corner of the earth, and to love one another more than we love ourselves. Yet, we only have a small amount of time to do it. We have this one life that is extremely short to follow God and to trust him in every single thing that we do. But after that is death. And after death is life. One day we will be resurrected and be brought to the true kingdom of God where Satan does not exist.

AIP Burger Buns

These burger buns are REALLY good! One of my pet peeves is making delicious looking biscuits only to find out that the center is paste-y and goo-y. Even if you bake it longer, it probably won't cook all the way through without burning the bottom. Yup. Not fun. SO...today I present to you....the most bread-y and delicious burger bun! These little guys are bread-y ALL the way through with a hint of plantain flavor. This makes them great for slathering honey on but really tasty when topped with a burger! This recipe uses a yellow plantain but also some plantain flour to add some starch to it (which is absolutely necessary!). Even my Dad who is not on the AIP said that the texture was great! SO, are you ready to eat some awesomeness?!

My Take On Our Problems

What if our problems were put there for a reason? I am not saying that God is making us miserable but I am saying that he may not be taking our problems away from us for a reason. What if I have health problems for the sole reason of encouraging others to fight through theirs? What if it will help me connect with other people and what if I have health problems so that when I receive my new and perfect body, it will be that much sweeter? What if the health issues that I ask God to take away are the very things that will make me be who God wants me to be?

My Take on AIP Pear and Ginger Muffins

These muffins are THE BOMB! They are not extremely visually pleasing but let me tell you, they sure please the taste buds! Even my Dad who eats a normal diet wanted another! Pears are in season here and so I wanted to make something with the ones that were sitting on the counter going bad. These muffins had to cook for longer than I expected but the outcome is totally worth it! They are best warm, whether straight from the oven or heated in the microwave!

My take on Pets

Pets are amazing. They can comfort you, keep you company, and they are like a live stuffed animal! When we moved to Mexico, we had no one to talk to, no one to hang out with. It was so tough. And to top it off, we had to let someone else take our beloved cat. I wished so hard that we could stick him in a crate and bring him with us but that wasn't possible. We really just needed a pet. To play with and love.

My Take on the Autoimmune Protocol (AIP)

This whole AIP thing, yeah. Its an adventure. Eating so strict with nothing but fruit, veggies, and meat to eat is difficult. I am pretty sure I have never done something this hard for so long. But you know what? It is totally worth it! And you know what? I am enjoying the struggles. I am enjoying having to pick myself up when I am in a low and I am enjoying the times when I am completely healthy and satisfied. The AIP changed me! I don't have to rely on prepackaged food and I don't have to pretend that I don't see all of those mysterious ingredients on the back. I am stronger now.

God is calling. We must answer. It is terrifying! What will he call ME to do?! What does he have in store for me? Even though it can be scary to think of what I might be called to do today or tomorrow, his plans are better than anything I can imagine. His ways are better than my ways and his thoughts are better than my thoughts. I need to trust in him and take the first leap of faith!

Victory

Jesus didn't come down from heaven for the sole purpose to die on a cross. He came down to be a living example of what we should strive for and IN that, he gave his life for us. He was SO obedient that in order to show us what the ultimate sacrifice truly looks like, he was willing to give his life. He was showing us what it means to truly love one another. He was showing us that no power formed against him (death) will prosper. He was giving us a glimpse of his victory yet to come when he rose from the grave. That he has already won.

AIP Daikon Hash browns

While grocery shopping we decided to buy a parsnip. It was quite humongous actually and I planned to make some whipped parsnips with it. So I was chopping it up and I had some water that was boiling and I was almost ready but I decided to nibble a little piece. Hmmm. That is weird! I didn't know that parsnips taste just like RADISH!!! Well, there goes my plan for whipped parsnips! Google says that the root is actually called a daikon! Oops! What on earth shall we do?! Once it was mixed with some flour and made into a dough, we smooshed it and threw it (more like placed it carefully) into a pan. When they were done we tried a little shnibble of it and OH MY GOODNESS! IT IS SO GOOD! I could hardly believe how tasty it was! Crispy on the outside, soft and chewy on the inside! It was perfect! The radish flavor nearly vanished but the small hint of it worked perfectly with the onions and ginger! Hmmmm!

How To Build an AWESOME Salad!

To build the ultimate salad that will never bore you, make sure to do all of the following!


Step 1: choose one or more leafy greens (the darker the better)

  • lettuce
  • spinach
  • kale
  • arugula
  • romaine


Step 2: Choose one or more secondary vegetables

  • carrots
  • mushrooms
  • cucumber
  • celery
  • onions
  • avocado

Step 3: Choose a fruit. The fruit helps lighten it up a bit and gives you a pop of moisture here and there.
  • apple
  • orange (or citrus in general)
  • peach
  • pear
  • berries (blueberry, blackberry, raspberry,strawberry)
  • grapes
  • cherries
Step 4: Choose some dried fruit, nuts, and seeds. I love dried fruit on salads because it gives it a new texture.
  • raisins
  • craisins
  • prunes
  • dates
  • pistachios
  • cashews
  • pecans
  • almonds
  • macadamia
  • walnuts
  • hazelnuts
  • sunflower seeds
  • pumpkin seeds
Basically, anything you have on hand!


Step 5: Choose a protein.

  • shredded chicken
  • diced pork pieces
  • tuna
  • salmon

Aaand finally: the dressing. 


  • pre-made store-bought dressing
                OR
  • My ALL-TIME FAVORITE: Some apple cider vinegar, some olive oil, and some honey!! Yum! (Use a 3:1 ratio of olive oil to apple cider vinegar and a drizzle of honey!)

Now, enjoy the best salad EVER and be filled up with super healthy food!

Our Struggles


Your struggles today are setting you up for success tomorrow. When we first moved to Mexico, I struggled. I missed having friends, family, and a routine! It was a big adventure and I loved it but I struggled. Mom and Dad would always tell me that once I got through this, I would be that much stronger. There was no way I could have done it without relying on God. In the future I will be able face the unknown and tackle it with smile because I now I know that whatever is thrown my way, WE can get through it.

AIP Plantain biscuits

You have no idea how excited I am to share this recipe! When making these biscuits, I was so incredibly surprised at how much the dough held together and looked and felt just like normal dough! It was beautiful! I was even more surprised when I was able to cut out the biscuits from the dough and they held together!!

Naner Nuggets!

I present to you: Naner Nuggets! These little nuggets of goodness can be made using waaaay overripe bananas which is great for when you find that you have some going bad but don't know what to do with them! They are made with banana and coconut which makes them very filling and satisfy the craving for a quick snack! They are fairly easy to make and super delicious!
